Broccoli, Cashew and Cranberry Salad

Ingredients


  • 2 broccoli heads cut into pieces stems trimmed

  • 2 cups toasted cashews crushed *to taste

  • 1 cup dried cranberries

  • 1/2 red onion finely chopped

  • 1/2 cup mayonnaise

  • 1/4 cup hot water

Directions

  1. Place broccoli, onion, cranberries, and cashews in a salad bowl.

  2. Mix the mayonnaise with the hot water in a separate bowl and stir in the salad ingredients.

  3. Cover and allow to rest until cold.


Tip

Wash the cashews in salt water, drain them a little then roast them in the oven for about 20 minutes until golden/dark brown.
