Butternut Squash Salad With Feta And Pomegranate

This salad of roasted butternut squash is a go-to for a nutritious dish!

A bed of young arugula that has been tenderized is topped with crisp beets, sweet pomegranate, caramelized squash, and cubed feta cheese.

  • 2 cups of butternut squash (1 stick) unsalted butter, room temperature

  • ½ pomegranate

  • Cubed feta cheese

  • 1 cup of arugula

  • 1 cup of fresh cubed beetroots

Honey Dijon Dressing

  • Olive oil

  • 3 tablespoons lemon juice, freshly squeezed

  • 2 tablespoons white wine vinegar

  • 1 small shallot, finely minced

  • 1 teaspoon honey

  • ½ tsp each salt and pepper

  • 1 teaspoon Dijon

Prep Time: 15 minutes

Total Time: 30 minutes

Servings: 2


  1. Heat oven to 400°.

  2. Mix the dressing ingredients together first, then set aside to let the flavors mix while you prepare the salad.

  3. Slice and cube the squash, season it with 2 teaspoons of olive oil, followed by adequate amounts of salt and pepper, and roast it in the oven (or in your air fryer) for 15 minutes or more, turning halfway through until brown and tender. Remove when cooked.

  4. Place the arugula in a serving bowl and garnish with the feta, cubed beetroots, roasted butternut squash, and Pomegranate.

  5. Add the Honey-Lemon Dijon dressing and serve by drizzling or tossing.

Cooking tips

- You can swap the arugula with spinach or kale.

- Substitute goat cheese for the feta.

- Add roasted sunflower seeds or roasted pecans.

- Enjoy and refrigerate it tightly covered in an airtight container for a later time

The Butternut squash can be served warm or cold with this salad.
