Ingredients:
For the cake:
1 and 3/4 cups all-purpose flour
1 and 3/4 cups granulated sugar
3/4 cup unsweetened cocoa powder
1 and 1/2 teaspoons baking powder
1 and 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs, at room temperature
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
For the chocolate fudge frosting:
1 cup unsalted butter, softened
3 and 1/2 cups powdered sugar
1 cup unsweetened cocoa powder
1/2 cup heavy cream
1 teaspoon vanilla extract
Pinch of salt
Directions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add the eggs, milk, oil, and vanilla extract to the dry ingredients. Beat on medium speed until well combined.
Reduce the mixer speed to low and carefully add the boiling water to the cake batter. Mix until smooth, but don't overmix.
Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
Bake in the preheated oven for 30-35 minutes, or until a toothpick or butterknife inserted into the center of the cakes comes out clean.
Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
While the cakes are cooling, prepare the chocolate fudge frosting. In a large mixing bowl, beat the softened butter until creamy.
Gradually add the powdered sugar and cocoa powder, mixing on low speed until well combined.
Add the heavy cream, vanilla extract, and a pinch of salt. Beat on medium-high speed until the frosting is smooth and creamy.
Once the cakes have cooled completely, place one layer on a serving plate or cake stand. Spread a generous layer of chocolate fudge frosting over the top.
Carefully place the second cake layer on top and frost the top and sides of the cake with the remaining frosting.
Optional: Decorate the cake with chocolate shavings, sprinkles, or fresh berries.
Slice, serve, and enjoy the indulgent goodness of this decadent chocolate fudge cake!
Store any leftover cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 1 week.
