Homemade Green Bean Casserole

Ingredients
1 lb. green beans, trimmed
1 onion, sliced into halves
2 cloves garlic, minced
Kosher salt
6 tbsp. butter, divided
3 c. whole milk
8 oz. sliced mushrooms
1/4 c. all-purpose flour
Freshly ground black pepper

Directions
Preheat oven to 350°. Prepare an ice bath: In a large simmer pot of boiling water, add green beans and cook until bright green, about 5 minutes. Using tongs transfer green beans to an ice bath to cool, then drain and transfer to a bowl to dry.
Over medium heat, in a large skillet, melt 2 tablespoons of butter. Add in the onion and cook, stirring occasionally, until tender for about 5 minutes. Add in mushrooms and season with salt and pepper. Cook and stir, until mushrooms are golden. Stir in garlic and cook until fragrant for 1 minute, then transfer mixture to a large bowl.
Using the same skillet, melt the remaining 4 tablespoons of butter over medium heat. Whisk in flour and cook until golden, about 2 minutes. Slowly and gradually whisk in milk and add in some salt and pepper. Bring to a simmer and cook until thickened, for about 3 minutes. Remove from heat, then add green bean mixture and toss until fully combined.
Transfer to a casserole dish and bake until warmed through and bubbling, about 30 minutes.
Top with fried onions and bake for 6 minutes more.
