White Forest Chocolate Cake

Delicious moist chocolate cake layers filled and frosted with creamy white chocolate whipped cream, adorned with chopped maraschino cherries for a burst of sweetness.

Ingredients:
For the Cake:
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
2 teaspoons vanilla extract
1/2 cup boiling water
For the Filling and Frosting:
2 cups heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup white chocolate chips, melted and cooled
1 cup maraschino cherries, drained and chopped
Additional maraschino cherries for garnish
White chocolate curls for garnish (optional)
Directions
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until smooth and well combined.
Stir in the boiling water until the batter is well mixed and smooth. The batter will be thin.
Divide the batter evenly between the prepared cake pans.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
While the cakes are cooling, prepare the filling and frosting. In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Gently fold in the melted white chocolate until well combined.
Once the cakes are completely cooled, place one cake layer on a serving plate or cake stand.
Spread a layer of the white chocolate whipped cream frosting over the top of the cake layer.
Sprinkle the chopped maraschino cherries evenly over the frosting.
Place the second cake layer on top and press down gently.
Frost the top and sides of the cake with the remaining white chocolate whipped cream frosting.
Garnish the top of the cake with white chocolate curls, if desired.
Chill the cake in the refrigerator for at least 1 hour before serving to allow the frosting to set. Slice and serve your delicious White Forest Chocolate Cake, and enjoy!
