Ingredients:

  • 2 pounds (900g) beef stew meat, cut into cubes

  • Salt and black pepper to taste

  • 2 tablespoons olive oil

  • 4 slices bacon, chopped

  • 1 onion, chopped

  • 2 carrots, peeled and sliced

  • 2 cloves garlic, minced

  • 1 tablespoon tomato paste

  • 2 tablespoons all-purpose flour

  • 2 cups red wine (such as Burgundy or Pinot Noir)

  • 2 cups beef broth

  • 2 bay leaves

  • 1 teaspoon dried thyme

  • 1 pound (450g) baby potatoes, halved or quartered

  • Fresh parsley, chopped, for garnish (optional)


Directions

  1. Season the beef cubes with salt and black pepper to taste.

  2. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the chopped bacon and cook until crispy. Remove the bacon from the pot and set aside.

  3. In the same pot, add the seasoned beef cubes in batches and brown them on all sides. Remove the browned beef cubes from the pot and set aside.

  4. Add the chopped onion and sliced carrots to the pot. Cook until softened, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

  5. Stir in the tomato paste and flour, and cook for 1-2 minutes to coat the vegetables.

  6. Slowly pour in the red wine, scraping the bottom of the pot to loosen any browned bits. Bring the mixture to a simmer and cook for 5 minutes to reduce slightly.

  7. Return the browned beef cubes and cooked bacon to the pot. Add the beef broth, bay leaves, and dried thyme. Stir to combine.

  8. Cover the pot and simmer over low heat for 2-3 hours, or until the beef is tender and the sauce has thickened.

  9. About 30 minutes before the beef is done cooking, add the halved or quartered baby potatoes to the pot.

  10. Once the beef and potatoes are cooked through, remove the pot from the heat.

  11. Serve the Beef Bourguignon hot, garnished with chopped fresh parsley, if desired.
