Ingredients:

  • 1 pound (450g) baby potatoes washed.

  • 2 cups mushrooms, sliced (such as button or cremini)

  • 3 cloves garlic, minced

  • 2 tablespoons olive oil

  • 1 tablespoon butter

  • 1/4 cup chicken or vegetable broth

  • 1/2 cup heavy cream

  • 1 tablespoon all-purpose flour (optional, for thickening)

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)



Directions

  1. Preheat your oven to 400°F (200°C).

  2. Place the baby potatoes on a baking sheet. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Toss to coat evenly.

  3. Roast the baby potatoes in the preheated oven for 20-25 minutes, or until they are golden brown and fork-tender.

  4. While the potatoes are roasting, heat the remaining tablespoon of olive oil and butter in a large skillet over medium heat.

  5. Add the sliced mushrooms to the skillet and sauté until they are golden brown and tender, about 5-7 minutes.

  6. Add the minced garlic to the skillet and cook for an additional minute until fragrant.

  7. Pour in the chicken or vegetable broth and bring to a simmer. Let it cook for 2-3 minutes to reduce slightly.

  8. Reduce the heat to low and stir in the heavy cream. If you prefer a thicker sauce, you can whisk in 1 tablespoon of all-purpose flour.

  9. Season the mushroom sauce with salt and pepper to taste.

  10. Once the baby potatoes are roasted, transfer them to the skillet with the mushroom sauce. Gently toss to coat the potatoes in the sauce.

  11. Let the potatoes simmer in the sauce for a few minutes to absorb the flavours.

  12. Garnish the roasted baby potatoes with mushroom sauce with chopped fresh parsley.
