Grilled Lemon Herb Chicken

Ingredients:
4 boneless, skinless chicken breasts
2 lemons
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
2 tablespoons fresh thyme leaves, chopped
2 tablespoons fresh rosemary leaves, chopped
1/4 cup olive oil
Salt and pepper to taste
Directions
Start by preparing the marinade. In a small bowl, zest and juice one lemon. Add minced garlic, chopped parsley, thyme, rosemary, olive oil, salt, and pepper. Mix well to combine.
Place the chicken breasts in a shallow dish or a large resealable plastic bag. Pour the marinade over the chicken, making sure each breast is evenly coated. Cover the dish or seal the bag and refrigerate for at least 1 hour, or ideally overnight, to allow the flavours to penetrate the chicken.
Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.
Remove the marinated chicken breasts from the refrigerator and let them come to room temperature for about 15-20 minutes before grilling.
Once the grill is hot, place the chicken breasts on the grill. Discard any excess marinade. Grill the chicken for about 6-7 minutes per side, or until they are cooked through and have beautiful grill marks. The internal temperature of the chicken should reach 165°F (75°C).
While the chicken is grilling, slice the remaining lemon into wedges for serving.
Once the chicken is done, remove it from the grill and let it rest for a few minutes before serving.
Serve the grilled lemon herb chicken hot, garnished with lemon wedges and additional fresh herbs if desired. Enjoy with your favourite side dishes like grilled vegetables, salad, or rice.
