  • 4 cups cubed seedless watermelon

  • 1 cup crumbled feta cheese

  • 1/4 cup fresh mint leaves, chopped

  • 1/4 cup red onion, thinly sliced

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic vinegar

  • Salt and pepper to taste


  1. Start by preparing the watermelon. Cut the watermelon into bite-sized cubes, discarding any seeds or rind. Place the cubed watermelon in a large mixing bowl.

  2. Add the crumbled or cubed feta cheese to the bowl with the watermelon.

  3. Finely chop the fresh mint leaves and thinly slice the red onion. Add them to the bowl with the watermelon and feta.

  4. In a small bowl, whisk together the extra virgin olive oil and balsamic vinegar to make the dressing.

  5. Drizzle the dressing over the watermelon, feta, mint, and red onion mixture. Gently toss everything together until the salad is evenly coated with the dressing.

  6. Season the salad with salt and pepper to taste. Remember that the feta cheese is salty, so you may not need much additional salt.

  7. Transfer the watermelon feta salad to a serving platter or individual plates.

  8. Optionally, garnish the salad with a few extra mint leaves for a pop of colour.
