Caramel Pecan Bars Recipe
Ingredients
For the Shortbread Crust:
2 cups all-purpose flour
1/2 cup granulated sugar
1 cup unsalted butter, softened
For the Caramel Pecan Filling:
1 cup unsalted butter
1 cup brown sugar, packed
1/3 cup honey or light corn syrup
2 tablespoons heavy cream
2 cups pecans, roughly chopped
Directions
Preheat the Oven
Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.
Make the Shortbread Crust
In a mixing bowl, combine the flour, sugar, and softened butter. Mix until the dough comes together.
Press the dough evenly into the prepared baking pan.
Bake for 18–20 minutes or until the edges are lightly golden.
Prepare the Caramel Pecan Filling
In a medium saucepan, melt the butter over medium heat. Add the brown sugar, honey (or corn syrup), and heavy cream.
Stir constantly until the mixture begins to boil, then cook for 3–4 minutes until thickened.
Remove from heat and stir in the chopped pecans.
Assemble and Bake
Pour the caramel pecan mixture over the pre-baked crust, spreading it evenly.
Bake for an additional 15–18 minutes, or until the filling is bubbling and golden.
Cool and Slice
Allow the bars to cool completely in the pan before lifting them out using the parchment overhang.
Slice into squares or bars for serving.
