Caramel Pecan Bars Recipe


Ingredients


For the Shortbread Crust:

  • 2 cups all-purpose flour

  • 1/2 cup granulated sugar

  • 1 cup unsalted butter, softened


For the Caramel Pecan Filling:

  • 1 cup unsalted butter

  • 1 cup brown sugar, packed

  • 1/3 cup honey or light corn syrup

  • 2 tablespoons heavy cream

  • 2 cups pecans, roughly chopped



Directions


  1. Preheat the Oven

    • Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal.

  2. Make the Shortbread Crust

    • In a mixing bowl, combine the flour, sugar, and softened butter. Mix until the dough comes together.

    • Press the dough evenly into the prepared baking pan.

    • Bake for 18–20 minutes or until the edges are lightly golden.

  3. Prepare the Caramel Pecan Filling

    • In a medium saucepan, melt the butter over medium heat. Add the brown sugar, honey (or corn syrup), and heavy cream.

    • Stir constantly until the mixture begins to boil, then cook for 3–4 minutes until thickened.

    • Remove from heat and stir in the chopped pecans.

  4. Assemble and Bake

    • Pour the caramel pecan mixture over the pre-baked crust, spreading it evenly.

    • Bake for an additional 15–18 minutes, or until the filling is bubbling and golden.

  5. Cool and Slice

    • Allow the bars to cool completely in the pan before lifting them out using the parchment overhang.

    • Slice into squares or bars for serving.
