Grilled Chicken & Avocado Lettuce Salad


Ingredients for the salad:

  • 2 boneless, skinless chicken breasts

  • 1 ripe avocado, diced

  • 2 hard-boiled eggs, sliced

  • 1 large head of Romaine lettuce, chopped

  • 1/4 cup grated Parmesan cheese

  • Cherry tomatoes (optional)

  • Cucumber slices (optional)

  • Chives (optional)


Ingredients for the marinade:

  • 1 tablespoon lemon juice

  • 2 cloves garlic, minced

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

  • 2 tablespoons olive oil


Ingredients for the Dressing:

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice

  • 1 teaspoon Dijon mustard

  • 1 clove garlic, minced

  • Salt and pepper to taste

Directions

  1. Marinate the Chicken:


  • In a bowl, combine 2 tablespoons olive oil, 1 tablespoon lemon juice, minced garlic, dried oregano, salt, and pepper.

  • Add the chicken breasts to the marinade and let them sit for at least 2 hours.


2. Grill the Chicken


  • Preheat your grill to medium-high heat.

  • Grill the chicken breasts for 6-7 minutes on each side or until fully cooked and juices run clear.

  • Let the chicken rest for a few minutes before slicing it into strips.



3. Prepare the Salad:


  • In a large salad bowl, combine chopped Romaine lettuce, diced avocado, and sliced hard-boiled eggs.

  • (Optional) Add cherry tomatoes, chives and cucumber slices for extra flavour and texture.


4. Make the Dressing:


  • In a small bowl, whisk together 1/4 cup olive oil, 2 tablespoons lemon juice, Dijon mustard, minced garlic, salt, and pepper until well combined.



5. Assemble the Salad:


  • Place the sliced grilled chicken on top of the salad.

  • Drizzle the dressing over the salad.

  • Sprinkle the grated Parmesan cheese over the top.


Optional - Sprinkle some chives on the salad for extra flavour.

Toss the salad gently to coat the ingredients with the dressing. Serve immediately and enjoy your Grilled Chicken and Avocado Salad!
