Ingredients
4 cups fresh or frozen raspberries
1 cup granulated sugar
1 cup water
1 tablespoon lemon juice
Fresh mint leaves for garnish (optional)
Directions
Prepare the Simple Syrup
In a small saucepan, combine the sugar and water.
Heat over medium heat, stirring occasionally, until the sugar is completely dissolved.
Remove from heat and let the simple syrup cool to room temperature.
2. Blend the Raspberries
In a blender or food processor, add the raspberries and lemon juice.
Blend until smooth.
3. Strain the Raspberry Puree
Pour the raspberry puree through a fine mesh strainer into a large bowl, pressing down with a spoon to extract as much liquid as possible. Discard the seeds.
4. Combine and Chill
Mix the strained raspberry puree with the cooled simple syrup.
Cover and refrigerate the mixture for at least 1 hour, or until well chilled.
