Shrimp Pineapple Grilled Skewers

  • 1 pound large shrimp, peeled and deveined

  • 1 small pineapple, peeled, cored, and cut into chunks

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 teaspoon paprika

  • 1/2 teaspoon chilli powder

  • 1/2 teaspoon ground cumin

  • Salt and black pepper to taste

  • Wooden or metal skewers, soaked in water if using wooden skewers

  • Fresh cilantro leaves for garnish (optional)

  • Lime wedges for serving

  1. In a bowl, combine olive oil, minced garlic, paprika, chilli powder, ground cumin, salt, and black pepper. Mix well to make the marinade.

  2. Add the peeled and deveined shrimp to the marinade. Toss to coat the shrimp evenly. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours.

  3. Preheat your grill to medium-high heat.

  4. Thread the marinated shrimp and pineapple chunks onto the skewers, alternating between shrimp and pineapple pieces.

  5. Place the skewers on the preheated grill. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque and the pineapple is caramelized with grill marks.

  6. Remove the skewers from the grill and transfer them to a serving platter.

  7. Garnish the shrimp pineapple skewers with fresh cilantro leaves, if desired.

  8. Serve the skewers hot, with lime wedges on the side for squeezing over the shrimp and pineapple just before eating. Enjoy these delicious grilled skewers as a flavorful appetizer or main course!
