Ingredients:

For the Chicken Marinade:

  • 1.5 pounds (about 700g) of boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

  • 1 cup plain yogurt

  • 2 tablespoons lemon juice

  • 1 tablespoon ginger paste

  • 1 tablespoon garlic paste

  • 1 teaspoon ground turmeric

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1 teaspoon garam masala

  • 1 teaspoon ground coriander

  • Salt and pepper to taste For the Butter Chicken Sauce:

  • 4 tablespoons unsalted butter

  • 1 large onion, finely chopped

  • 4 cloves garlic, minced

  • 1 tablespoon ginger paste

  • 1 teaspoon ground turmeric

  • 2 teaspoons ground cumin

  • 2 teaspoons ground coriander

  • 2 teaspoons paprika

  • 1 teaspoon garam masala

  • 1 can (14 oz/400g) crushed tomatoes

  • 1 cup heavy cream

  • Salt and pepper to taste

  • Fresh cilantro, chopped (for garnish)


Directions

  1. In a bowl, combine all the ingredients for the chicken marinade. Mix well, ensuring each piece of chicken is coated evenly. Cover and refrigerate for at least 1 hour, or overnight for best results.

  2. Preheat the oven to 400°F (200°C). Place the marinated chicken on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until the chicken is cooked through and slightly charred around the edges. Set aside.

  3. In a large skillet or saucepan, melt the butter over medium heat. Add the chopped onion and sauté until soft and translucent, about 5-7 minutes.

  4. Stir in the minced garlic and ginger paste, and cook for another 1-2 minutes until fragrant.

  5. Add the ground turmeric, cumin, coriander, paprika, and garam masala. Cook, stirring constantly, for about 1 minute to toast the spices.

  6. Pour in the crushed tomatoes and simmer for 10-15 minutes, stirring occasionally, until the sauce thickens slightly.

  7. Stir in the heavy cream and cooked chicken pieces. Simmer for an additional 5-10 minutes, allowing the flavours to meld together. Season with salt and pepper to taste.

  8. Garnish with chopped cilantro before serving.
