Roasted radishes lose their sharpness in the oven and become something sweeter and more tender — served over garlicky yogurt and finished with fresh chives. A light, unexpected spring side dish.

Roasted Radish with Garlic Chive Yogurt Recipe
INGREDIENTS
400 grams radishes, tops trimmed and halved
2 tablespoons olive oil
0.5 teaspoons sea salt
0.3 teaspoons black pepper, freshly ground
1 tsp honey
200 grams full-fat Greek yogurt
1 garlic clove, finely grated
1 tablespoon fresh lemon juice
0.3 teaspoons sea salt
3 tbsp fresh garlic chives, finely chopped
2 tablespoons olive oil, to finish
0.5 teaspoons chilli flakes, optional
DIRECTIONS
1. Preheat: Preheat your oven to 220°C (425°F). Line a large baking sheet with parchment paper.
2. Roast the radishes: Toss 400 grams of radishes, tops trimmed and halved, with 2 tablespoons olive oil, 0.5 teaspoons sea salt, 0.3 teaspoons black pepper, freshly ground, and 1 tsp. honey. Spread in a single layer on the prepared baking sheet—cut side down for maximum caramelization. Roast for 20–22 minutes until tender, golden at the edges, and lightly caramelized.
3. Make the garlic yogurt: While the radishes roast, whisk together 200 grams full-fat Greek yogurt, 1 garlic clove, finely grated, 1 tablespoon fresh lemon juice, and 0.3 teaspoons sea salt until smooth. Taste and adjust seasoning. Spread across a wide serving plate or shallow bowl.
4. Assemble and serve: Spoon the warm roasted radishes over the yogurt. Scatter 3 tbsp of finely chopped fresh garlic chives generously across the top. Drizzle with 2 tablespoons of olive oil to finish and finish with half a teaspoon of chilli flakes, optional if using. Serve immediately.
NOTES
Radishes shrink considerably during roasting — don't be alarmed. The key is high heat and enough space on the pan so they roast rather than steam. If garlic chives are unavailable, regular chives with a small amount of minced garlic stirred into the yogurt work well. This dish is best served immediately while the radishes are still warm against the cool yogurt.
