Creamy Chicken Thighs and Gnocchi


Ingredients:

  • 3-4 bone-in, skin-on chicken thighs

  • Salt and pepper to taste

  • 1 tablespoon olive oil

  • 1 tablespoon butter

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 1 teaspoon Italian seasoning

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1 pound potato gnocchi

  • Fresh parsley, chopped (for garnish)

  • Grated Parmesan cheese (optional, for serving)


Directions

  1. Season the chicken thighs generously with salt and pepper on both sides.

  2. Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken thighs, skin side down, and cook until golden brown and crispy, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.

  3. In the same skillet, add the diced onion and cook until softened about 3-4 minutes. Add the minced garlic and Italian seasoning, and cook for another minute until fragrant.

  4. Pour in the chicken broth, scraping the bottom of the skillet to release any browned bits. Bring the broth to a simmer.

  5. Return the chicken thighs to the skillet, nestling them into the broth mixture. Cover and simmer for 15-20 minutes, or until the chicken is cooked through and tender.

  6. Meanwhile, cook the gnocchi according to the package instructions. Drain and set aside.

  7. Once the chicken is cooked through, remove it from the skillet and set aside. Stir in the heavy cream and bring the mixture to a simmer.

  8. Add the cooked gnocchi to the skillet, stirring to coat in the creamy sauce.

  9. Return the chicken thighs to the skillet, spooning some of the sauce over the top.

  10. Allow everything to simmer together for another 5 minutes to heat through and meld the flavours.

  11. Garnish with chopped fresh parsley before serving.
